An interesting project for beginners in Arduino and electronics is this simple ohmmeter. It's based on the concept of a voltage divider and the analogue input on Arduino. The divider contains a known resistor, and the 'unknown' resistor under test. Using the data of the known resistor the Arduino can measure the voltage in the divider and then calculate the resistance of the unknown resistor. An exercise in knowns and unknown knowns!
